One of my new favorite fall dishes!
NEED::
Butternut Squash
Kale
2 Chicken Breasts
Baby Bella Mushrooms
Pecans
Sage
Kerrygold Butter
Parmesan Cheese
Garlic
Cabernet Sauvignon
Salt + Fresh Black Pepper
Red Pepper Flakes
Turmeric
Onion Powder
First, our yourself a glass of the Cabernet.
Preheat oven to 400 degrees.
Dice butternut squash, toss with olive oil, salt, black pepper, turmeric, cayenne pepper (adds the perfect spice to the offset the sweetness of the squash), and onion powder. Add three whole cloves of garlic to the corner of the pan to road the garlic until it’s sweet. Roast for 45 minutes or until browned.
Bring your pot of *salted* water to a boil.
Add teaspoon of butter + crushed pecans to sauce pan and toast. Once fragrant, put to side.
Slice chicken breasts into desired bites, then season with salt, pepper, red pepper flakes, onion powder, sautée in olive oil — add in roasted garlic cloves from oven– then cook throughly.
In another sauce pan — add a healthy amount of butter (I eyeball everything but Kerrygold is crack so don’t skimp, this is the base of the sauce) and sage leaves — over low heat, sautée until browned. Add in sliced mushrooms, garlic, salt, + pepper. Once mushrooms are cooked down a bit — add red wine to the pan along with a tablespoon(or more) of olive oil and let simmer.
Cook your pasta al dente — going to cook a little bit more once added to the large sauce pan.
Chop kale. Then add the pecans, chicken, roasted butternut squash, kale, and pasta to the large sauce pan with the mushrooms. (I think I added evermore butter + cabernet to the sauce at this point for extra liquid) Then mix all together until pasta is coated.
Slice fresh sage to garnish and top with copious amounts of freshly grated Parmesan cheese.
Add more freshly ground black pepper then it’s ready to be served!
I forgot yellow onions at the store — so I used onion powder but onions will add even more liquid to the sauce.
I used a Brady 2019 Cabernet for cooking but you can use any cheaper bottle for the sauce tbh.
