The chewiest. These are my favorite cookies. Funfetti makes everything better. I have been baking + consuming WAY too much sugar during quarantine 2020. Not stopping any time soon though… This chewy funfetti cookies recipe were inspired by @thekitchenwitch! Go check out her food blog. Love her. I switched it up a little and added a secret ingredient courtesy of Mark Fable. Thank you, Dad for teaching me alllll of the baking secrets!
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar ***
- 1 stick unsalted butter (softened)
- 1 1/4 cup light brown sugar
- 1 large egg (at room temperature)
- 1 teaspoon vanilla extract
- 1/3 cup rainbow sprinkles
*** the secret ingredient that will make them the chewiest cookies you’ve ever had!
- Preheat oven to 350.
- Line baking sheet with parchment paper.
(( I skipped salt since the only butter I had was salted! ))
So normally — you 3. whisk together the dry ingredients
Next, in a separate bowl, 4. whisk the butter, egg and sugar together. 5. Then combine.
BUT I messed up and just whisked the butter + egg separately then combined it in the big bowl with everything else.
Then I 6. baked them for about 12 minutes and took them out to let them cool. In other words… bake then until the outside is cooked then take out and let cool and they will fall into the chewiest cookies ever!
Sorry this is a bit of a #hotmess but that’s just what happens when I end up cooking or baking.. or breathing.
xxo,
